We are an off-premise, custom-to-the-client caterer, operating out of a 6,000 square foot cooking and production facility in Island Park, NY.
Since 1976, TBLS has proudly offered the highest level of full-service hospitality to discerning social, corporate and non-profit clientele throughout the Tri-State Area, including the East End of Long Island.

Eric has 15 years of experience in the food service industry, including both front and back of house. His previous work as the Director of Catering at Dean & Deluca & Eli Zabar’s has prepared Eric to execute at the highest levels. Eric has worked iconic events at venues such as the US Open Tennis Center, Kentucky Derby, and NASCAR events. He's also overseen many national contracts for large food purveyors. Eric has become a diverse and energetic force in this industry. Eric’s professional attitude, attention to detail, and knowledge of this rapidly changing industry has made him a pillar in this field.

Edwin's passion for food is evident in his work, with a particular fondness for Italian cuisine, reflecting his appreciation for bold flavors and traditional culinary practices. He is committed to elevating dining experiences through creativity, quality ingredients, and meticulous attention to detail. After refining his expertise at several top catering companies in NYC, Levi became part of the Paul Evans team in 2023. Throughout his time, Levi has utilized his varied background and experiences to become an indispensable member of Paul Evans. With extreme focus and meticulous attention to detail, Levi has held numerous critical roles within the company, including managing deliveries, pack-out and staffing. His workdays are extensive, and his dedication is steadfast. Levi is instrumental in the growth and development of the company's catering business. His commitment to the ethos and vision of Paul Evans is unwavering, as he continues to advance both in his personal and professional life.
